Is a soft cheese with a bloomy rind, made from goat’s milk with a mild flavour on the outside that grows slightly more acid towards the centre, but is never salty. Its soft texture makes it melt on the palate. Depending on how long it is aged for, it is either chalky or very soft, thanks to the proteolysis that characterises the brief ageing period of this product.
An excellent snack cheese, it can also be served at the end of a meal with fruit chutney. Beaten with yogurt and cream, it can be used to make sauces for dips and in light antipasti.
