Gorgonzola Sweet type is an ancient cheese produced from full-cream milk. Its name comes from Gorgonzola, a country close to Milano, rich in springs and rare grass. Here big herd of cows used to pasture; here, due to the high quantity of hay, used to also come cows from the close Alpine Valleys in winter time when the mountains were covered by snow.
The typicalness is given by the penicillium moulds that penetrate into cheese and develop in meanders, in a natural way of hand made by man, till to give that particular taste due to the demolition of fats and proteins. This cheese is particularly digestible and nutritious.
