Description
Fontina DOP is a cheese realized with raw full-cream milk. You can see it with a compact rind, thin and light brown in colour, which contains a semi-cooked, elastic and melting paste showing small and poor holes. Fontina cheese is light straw-coloured in winter time when cows are fed with hay, in summer time it becomes deep straw-coloured. The taste is sweet and the fragrance grows more marked with its maturing.
Fontina is very energy-giving, high in phosphorus, calcium and A and B vitamins: a genuine, digestible complete food.
Its production is covered by severe regulation that defines it: ”Fat cheese of semi-cooked paste, made of full-cream milk of cows from Aosta valley breed (red, black, brown mark), coming from one only milking.
In 1996 European Community named Fontina “Denominazione di origine protetta” (DOP). This ratifies in an unmistakable way that its production must take place in Valle d’Aosta exclusively, an area with particular geographical, pedological, weather, agronomic and traditional conditions, to prevent forgery.
At full maturing, after several and severe controls, Consorzio Produttori e Tutela of FONTINA DOP permits to brand it.
