Coppa Piacentina D.O.P.

Coppa is the most famous cold cut in the territory of Piacenza. Its origin is linked to familiar tradition hand down in the farms of the valleys where this cold cut was considered one of the most valuable product, to be privileged in the festivities and as presents of a certain importance.

Coppa Piacentina is  produced with meat of the mature pork neck, born and bred in breedings of Emilia Romagna and Lombardia, following the methods established for the Po valley heavy pigs.

It must be tasted thinny sliced with fragrant bread, it is very good also with fried dumpling (gnocco fritto) or piadinas.

Coppa Piacentina is  produced with meat of the mature pork neck, born and bred in breedings of Emilia Romagna and Lombardia, following the methods established for the Po valley heavy pigs.

Coppa piacentina is got from the perfectly bled cervical muscles of the upper part of  pigs.

The transport of the muscles to the processing plant must absolutely take place within 72 hours from the slaughter by coolants. Later on they are submitted to the usual grooming that means the trimming and the pressing of the blood vessels.

Gluten and milk derivates free, all the ingredients are allergens and OGM free.

It must be tasted thinny sliced with fragrant bread, it is very good also with fried dumpling (gnocco fritto) or piadinas.
